Coconut and Lime Grilled Shrimp

INGREDIENTS
1 lime, zested and juiced
2 garlic cloves
1/3 cup chopped fresh cilantro
1/3 cup shredded coconut
1/4 cup olive oil
1/4 cup soy sauce
1 pound uncooked medium shrimp, peeled and deveined
skewers

DIRECTIONS
Combine the lime zest, lime juice, garlic, cilantro, coconut, olive oil, and soy sauce in a food processor; blend until smooth. Place the shrimp in a large bowl. Pour the sauce over the shrimp and toss to coat. Cover and allow to marinate at least 2 hours.
Preheat an outdoor grill for medium-high heat and lightly oil the grate.
Thread the shrimp onto skewers, piercing each shrimp near the head and tail.
Cook the skewers on the preheated grill, turning frequently until nicely browned on all sides and the meat is no longer pink in the center, 2 to 3 minutes per side

Grilled Peanut Butter Chicken

INGREDIENTS (Nutrition)
2 tablespoons creamy peanut butter
1/2 cup soy sauce
1/2 cup lemon or lime juice
1 tablespoon brown sugar
2 tablespoons curry powder
2 cloves garlic, chopped
1 teaspoon hot pepper sauce
6 skinless, boneless chicken breast halves - cubed

DIRECTIONS
In a mixing bowl, combine peanut butter, soy sauce, lime juice, brown sugar, curry powder, garlic and hot pepper sauce. Place the chicken breasts in the marinade and refrigerate. Let the chicken marinate at least 2 hours, overnight is best.
Preheat a grill to high heat.
Weave the chicken onto skewers, then grill for 5 minutes per side.

Serves 12

 

STUFFED MUSHROOMS

1 1/2 lb. med.-sized mushrooms
4 oz. shredded mozzarella cheese
1 Cup Italian bread crumb (or Whole wheat bread crumb)
1 scallion, diced fine
Olive oil

Wipe mushrooms with paper towel. Remove stems and dice. Sauté scallions and stems in some of the Olive oil (about 4 tablespoons). . On low heat, add bread crumbs; mix well. take off of heat  add cheese and  mix well. 

Put mushrooms on large cookie sheet lined with tinfoil. Place stuffing on top of each mushroom. Bake at 350 degrees for 15 minutes. Put under broiler to brown (1 minute -watch closely). Serve hot.

NOTE: If need be, can be reheated easily. Just re-bake for 10 minutes. Do not freeze.
