Cake Recipes

Cheese Cake
Crust:
Use Pre-made Gram Cracker Crust or your favorite homemade cookie crust. Chocolate cookies crust is very good.
Filling:
4 eggs Separated
1/2 cup butter
2 8 oz. packages of low fat cream cheese softened
2 Tablespoon SlimSweet
1 tablespoon baking powder
1 tablespoon Lemon Juice
Directions:
Heat oven to 325 degrees.
beat egg whites at high speed, scraping bowl often, until soft peaks form (1 to 2 min.) set aside. In large bowl combine butter, cream cheese, and egg yolks. Bet at med. speed, scraping bowl often, until smooth and creamy (1 to 2 min.) Add remaining ingredients except egg whites. Continue mixing (1 to 2 min.) until well blended. By hand fold in beaten egg whites. Spoon into Pre-made Crust and bake for 60 to 80 min. or until center is set and firm to touch. Cool 15 min. loosen sides of cheesecake cool completely (center will be cracked and will also fall a little in the middle). When serving top with favorite fruit and or whipped topping and enjoy!
(This recipe can also be made with 1/2 cup sugar and 1 tablespoon of SlimSweet saves about 1500 calories per recipe even using sugar. This author likes it both ways)

Chocolate Cake
4 eggs
1/2 cup sugar or (Agave equivalent 1 tablespoon)
1 cup almonds, coarsely chopped
1 tsp vanilla extract
2 Tbs. almond flour
1 Tbs. baking soda
3 Tbs. unsweetened cocoa powder
Directions:
Separate egg whites from yolks. In a blender, blend the whites and sweetener. Continuing blending, add the ingredients in this order: nuts, vanilla, flour, soda, yolks, and cocoa, blend for 2 minutes more. Bake at 350 for 20 minutes. |
Cream Cheese Frosting
4 ounces unsalted butter, softened
4 ounces cream cheese, softened
2 cups powdered sugar
1 teaspoon vanilla extract
Directions:
In a large bowl, beat together the butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract
