Apple Deserts & Appetizers

Cabbage/Apple Slaw

ingredients:

1 lb shredded cabbage

1/4 cup chopped red onion

2 organic apples

1/2 cup chopped walnuts

1/4 cup cider vinagar

1/4 cup organic apple juice

1 1/2 tsp. Honey or Agave

2 large spoonfulls of GF Mayonase

1 tablespoon GF spicy mustard

1 tbsp fine chopped fresh parsley

Directions: Combine cabbage, apples, onion and walnuts. In a seprate bowl or large mixing cup combine vinegar, juice and honey or Agave. Add mayo and mustard - Whisk together and add salt.Pour liquid over vegetables and fruit mixture and toss. Sprinkle with parsley and chill for about 20 mins.

SUMMER CHEESE STUFFED APPLES

3 oz. pkg. softened cream cheese

1 1/3 oz. Camembert cheese

1 tbsp. dry white wine

4 med. apples

Mix 3 ingredients together in bowl with blender until smooth. Core apples; scoop out inside leaving shells 1/2 inch thick. Fill with cheese mixture. Chill 2-3 hours. Cut in wedges.

 

APPLE "N" Grape Delight

1 envolope unflavored gelatin

1 1/2 cup apple juice

1 cup organic red seedless grapes (halved)

1 cup diced organic apple

1/4 cup finly diced celery

Directions:

soften gelatin in 1/4 cup water for 5 minutes. Heat gelatin over low heat, stirring constantlyuntil dissolved.

Add apple juce. Chill mixture until it begins to thicken

Stir in grapes, apples and celery.

pour into cmall bunt cale molds (I like the coated ones or the flex type)

Chill until set (about 1 hour)

Makes 8 half cup servings

Per serving: 54 calories (o from fat), 0 saturated fat, 0 cholesterol, 6.5mg sodium, 12 g carbohydrates, .5 gram fiber, .5 grams protein
